Shaved Brussels Sprouts with Pomegranate, Mint & Pistachio

What you'll need:

  • 2 cups shaved brussels sprouts

  • pomegranate seeds (from 1 pomegranate)

  • 1/4 cup chopped roasted unsalted pistachios

  • 1 lime (juiced)

  • 1 lemon (juiced)

  • 1 tbsp dijon mustard

  • 1 tbsp apple cider vinegar

  • 1 tbsp agave nectar

  • 1 tbsp olive oil

  • 1 tbsp minced garlic

  • 2 tsp salt

  • 2 mint sprigs chopped

Combine all ingredients except pistachios and pomegranate seeds in a large bowl and toss thoroughly for a few minutes. Let sit for at least a half hour, toss again. Taste to see if it needs more salt. Transfer to serving bowl, top with pomegranate seeds and pistachios and serve.
