Radicchio Salad with Blue Cheese & Walnuts

What you’ll need:

  • Radicchio - 1 head

  • Blue Cheese

  • 1 cup Walnuts

  • 1 tsp Sugar

  • 1 tsp Butter

  • 1/2 tsp Pimentón

  • Red Wine Vinegar

  • Olive Oil

  • Salt & Pepper

In a saucepan add 1 tbsp of olive oil, and 1 tbsp of butter. Turn to medium heat and let butter melt and mix with oil. Add walnuts and turn heat to low. Sprinkle with salt and sugar. Let the walnuts toast for 10 minutes total or until they turn a darker brown. Let cool on a plate.

Separate the Radicchio pieces, wash and spin dry. Break into the desired size pieces and place carefully in bowl. Add olive oil, red wine vinegar, salt and pepper to taste.

Arrange on plate, top with blue cheese- preferably Point Reyes, broken by hand- then add toasted walnuts.
