Smokey Carrots with Feta, Pomegranate & Herbs
What you'll need:
- Carrots 
- Feta 
- Pomegranate seeds 
- Mint 
- Cilantro 
- Lemon 
- Olive Oil 
- Pimentón 
- Salt & Pepper 
Preheat oven to 425 degrees. Slice carrots long ways once. If the carrots are fat, then slice them again. Toss carrots in olive oil, pimentón, salt and pepper. Roast on baking sheet for 20 minutes. Toss roasted carrots in lemon juice, and salt to taste. Don't over-salt because the feta should be pretty salty. Arrange carrots on plate, top with crumbled feta, pomegranate seeds, chopped mint and cilantro and a quick drizzle of good olive oil.
