Coconut Pecan Grain-Free Granola

What you’ll need:

  • 1 cup unsweetened coconut flakes

  • 1 cup pecans

  • 1/2 cup almonds

  • 1/2 cup pistachios

  • 1 tsp chia seeds

  • 1/4 tsp cinnamon

  • 1/8 tsp cardamom

  • 1/4 cup honey

  • 1/2 cup olive oil

  • 1/4 cup coconut oil

  • 1/2 tsp vanilla

Set oven to 300 degrees. Add all dried ingredients to bowl and stir to combine well. On the stovetop, warm olive oil, coconut, honey and vanilla until the have blended together. Pour over dry ingredients and mix well with your hands. Pour over baking sheet with parchment paper and bake for 45 minutes. Let cool. Store in air tight container once cooled.
